Executive Chef Ken Patrick has an enduring passion for creating great food inspired by great ingredients. During Chef Ken’s travels, he has developed a unique perspective on how people like to eat and cook today. He is known for his uncomplicated recipes, bright flavors and fresh food, which he believes is the type of cooking which comes from his heart-a place dedicated to culinary honesty. Chef Ken has received acclaim from the culinary community for his creativity and dedication to the art of cooking. His bold and colorful southwestern creations have sealed his reputation as a chef. He recently relocated back to Texas from traveling, where he honed and crafted his culinary talents working with international culinarians.

Chef Ken will bring the brand of service and style of food that he is known for throughout his career. He brings a sense of mystique to the community by always creating new and exciting offerings with fresh seasonal ingredients. In addition, his ever-changing menu will incorporate recipes that he has developed in different parts of the country.

My culinary point of view is simplicity with bold flavors. I believe most people can cook or have the desire to be better cooks. The challenge is being artistically creative. Most of us have learned to appreciate good food when we were young children and eating. I think about when my family is gathered around the dinner table, and how the menu reflects the occassion. Both the food and occassion are to be enjoyed as long as possible. I never sacrifice quality when it comes to great food. That's why I base my cooking on the freshest ingredients, because they regard high quality and freshness. The most flavoursome sun-ripened fruit and vegetables and freshly caught seafood are a must for producing the best food. Food is fun, and food is meant for sharing. It's ok to play with your food-be innovative, elevate it with spices, with sauces, with fillings, with toppings. Be imaginative. Go beyond the basics. Have fun. I strongly believe that the more time families and friends spend together cooking and eating, the stronger those family ties and friendships will become.

It's important for me to tell you that as we approach a new year here at Texas Catering Company, our culinary team is doing what we love to do. The enthusiasm we bring to the kitchen is what keeps our thinking fresh. We go through a creative process to decide what we think you want, and we brainstorm with food ideas and menus. Nothing makes me happier than getting people involved with food, excited about food, and cooking food.

I put together this fun dessert using ideas from one of my presentations for a Chef's Table event. It is nothing if not tropical, and is a great combination of sweet & tart, hot & cold, fruity & creamy. We believe in giving back to our community, "Making a Difference... Ensuring Success" and we need YOUR help!

Through the NBWEN Women's Fund, our desire is to award $20,000 in scholarships to deserving young ladies seeking a business degree from an accredited two- or four- year college or university, or vocational school, as well as grants to women in our community who wish to establish and grow their own business (startups in business less than 3 yrs).

Five women will each be awarded $2,500 grants, 5 women will each be awarded $1,000 scholarships, and 5 women will each be awarded $750 scholarships.
